Ginger Whoopie Pies


  1. Preheat oven to 375° F. Line a baking sheet with parchment paper.

  2. In a stand mixer, add flour, sugar, molasses, ginger, baking soda, cinnamon, salt and canola oil; blend. Add egg, blend well, then add water and blend.

  3. Using two spoons, drop dough onto baking sheet, about 1 inch apart. Bake 12 minutes. Cool on the pan for 5 minutes.

  4. Meanwhile, in a mixing bowl add butter and cream cheese. Blend until smooth. Gently fold in marshmallow cream.

  5. To sandwich the cookies, spoon a little frosting mixture onto flat side of one cookie. Top with a second cookie.
