Chocolate covering:

Directions:

For the filling:
    1. Mix dates, coconut and vanilla together in a food processor.
    2. Once combined, mix in pecans and water.
    3. Use a tablespoon cookie scoop to make balls with the mixture.
    4. You will want to make sure you roll them tightly.
    5. Place on a baking sheet and put into the freezer for 1 hour.
For the chocolate covering:
  1. In a double boiler, melt enjoy life chips and coconut oil.
  2. Dip frozen balls into the chocolate and coat thoroughly.
  3. Place onto a lined baking sheet and store in the fridge.
  4. Once chocolate is set, store in an airtight container and leave in the fridge.
