Ingredients, Always Organic:

  • 1 large or 2 small ripe organic bananas, well mashed
  • 1 whole organic egg, beaten
  • 1/2 tsp organic vanilla extract
  • 1/2 cup soy milk (or regular milk if you use it)
  • 2 tbsp melted butter or crisco butter flavored
  • 1 cup organic all purpose flour (or gluten free coconut flour)
  • 1/2 tsp fine ground sea salt
  • 1 tsp baking powder, for fluffier pancakes


  1. Mix banana, vanilla, egg, milk together in a bowl and make sure the banana is all mashed and mixed well. Add the melted butter, mix well
  2. Add dry ingredients and mix well. If batter is too stiff add a dash or two of milk. If the batter is too loose you can add a dash of flour. Add organic coconut flour as an alternate .
  3. Spray your pan or griddle with some  butter, “spray olive oil” or coconut oil. On a low to medium heat, pour some of the batter into the pan & give it about 1 minute or less, flip, cook another minute or so, and done! I love to add dark maple syrup and butter roasted pecans.   4. Serve and eat!


*Some advice would be to make them small so its easier to flip
