Ingredients, Always Organic

Makes 6 servings
  • 1 cup finely chopped organic red onion

  • Optional: 1 large clove of organic Garlic diced
  • 1 organic jalapeno pepper, seeded and finely chopped – or more to taste

  • 1/2 organic lime, 1/2 organic lemon, juiced

  • 2 1/2 cups organic Roma (plum) tomatoes, seeded and chopped about 6 organic roma tomatoes, if you use organic beefsteak tomatoes, use about 3

  • 1/2 cup chopped fresh organic cilantro

  • 1 teaspoon sea salt

  • 1/2 teaspoon ground black pepper

PREP TIME: 20 mins, READY IN: 40 mins

  1. Mix red onion, jalapeno pepper, and lime juice in a bowl. Allow to stand for 5 minutes. Mix in Roma tomatoes, cilantro, and salt; allow to stand 15 more minutes for flavors to blend.
  2. Serve with chips as a snack during a Movie or TV, or with meals, on tacos, burritos, enchiladas, and other Mexican and Spanish meals! Great with Guacamole!!
